We are looking for a Head chef Pastry Chef level used to a large dept managing a team (cruise ships, good quality hotels, dessert production)
Looking after 22 people with the section of 5 supervisors to meet the delivery schedule
Producing up to 23 product lines to a high standard approx 3000 pieces and garnishes
Managing staff, motivating and organizing the workload monitoring the standard of pastries produced
Managing Menu changes ensuring all samples are made to the development kitchen standard
Running the dept in the heads absence and looking after the packing room team
Able to work with senior managers on improving performance
Good communication skills and the ability to be firm with operatives where needed
Great technical knowledge
Able to complete all documentation to a high standard
Be willing to challenge the norm and recommend improvements to efficiency
Hours 7-4 Monday to Friday (overtime as required)
